warm spinach artichoke dip

it is so good.

it’s the perfect appetizer for a party at christmas!

or new years.

or any party all year round!

i left the mayonnaise (miracle whip) out last time and used more sour cream….and it was still yummy.
there are no rules that i am going to enforce on your dip.

you have my promise.

drain the artichokes and then choke them up into small pieces.
(HA! Β that was a typo but i had to leave it because it made me laugh….don’t choke…just chop…HA HA HA)

then toss that into a bowl with the parmesan cheese and thawed chopped spinach.

until i made this i did not know there was chopped spinach in the freezer section.
or anywhere actually.
i had never once in my life thought “where is spinach in this grocery store?”
until i was looking for it.
and sure enough….it is a real thing.

i think the only spinach i ever have had a thought about was popeye….and squeezing cans of it into his mouth?

mix up those three ingredients until they are combined.
then add in the rest from the list….sour cream, mayonnaise, cream cheese and garlic….mmmmm.

spread it into a 9×13 pan and bake it at 350 for 25-30 minutes.

i serve it with chips.
it would be good with crackers too.

it’s YUMMY.

and easy.

you will be happy you made it.

christine - Super-yum! This looks just like a dip I make for baby showers and get-togethers. Always a fave. If I have leftovers (or if I’ve doubled the recipe and held some back), I will use this the next night for dinner. Heat up, thin down with milk or half & half, toss with penne pasta and grilled chicken. YUM!

This is my all time favorite dip! When I was in highschool, a group of girlfriends got together every Christmas and had a little party with a grab bag gift. We took pictures and ate lots of food and now that we’re older and living apart with grown up lives the party still goes on. Sadly I am the only one not living in the Chicago area anymore and so they make my spinach artichoke dip in my memory. I love it best with tortilla chips, but hawaiian bread makes it pretty yummy too!

Lisa - I make a similar dip, but I can’t do miracle whip, it has to be Best Foods mayo for us. It’s also really good w/ slices of bread, toasted in the oven, yum yum! Tonight we had the cold spinach dip(made w/ Knorr veg. soup mix) for dinner!! One of my daughters said to me, “why is dip sooooo good?” lol…I told her it’s becuase it’s a bunch of bad food all smooshed together and then dipped into w/ more bad food!!! πŸ™‚ I love this time of year when having dip for dinner is ok cuz we’re too busy mixing up cookie batters!

Julie - Love this. I make a similar one, totally gag as I scoop the mayo in (IT IS SOOOOOOO GROSS AND STINKY), then put it out of my mind that it is even in there. Because when it comes out of the oven all bubbly and awesome. I die. But, so trying it with spinach next time. ANd lots of garlic.

Lynda@Me and My Pink Mixer - I just made a very similar recipe for our Christmas party last weekend and it was gone fast! I roast the artichokes in the oven first with a little olive oil, salt & pepper ~ it really brings out the flavor. I also top mine with mozzarella cheese ~ wish I had some right now! josie - This is absolutely the best dip. I love that it can be prepared ahead of time and just put in the oven, esp since I have to make 2 pans of it. One for Christmas Eve and Christmas Day.

Casey - I use a variation of this and it is indeed, delish! You can also use celery stalks to dip instead of chips to make it more carb friendly. I’m not saying that’s my favorite, but it is good!

I will email you a few more recipes similar… another great way to serve this is in a cob loaf…. cut the top off remove the inside bread put aside for toasting, put your dip inside and cook for same time but for last 10 mins on a tray put bread, broken into bite size pieces spray with some olive oil and put them in the oven too….. Delicious!!! great bbq food here… I have a wonderful Artichoke dip too…. OMG its the perfect cold weather dip! I’ll get back to you
