crescent chicken

this recipe has 5 ingredients.
that’s it.
it’s so easy….and i bet your kids will eat it.
and maybe you even have the ingredients in your cupboard right now.

you will need about 2 cups of cooked chopped up chicken (ingredient #1)

then add 1 cup of shredded cheese. (ingredient #2)

(sometimes i add some minced garlic into this)

ingredient #3 is a can (or two) of refrigertor cresent rolls.

not even the fancy kind.
we have seven mouths to feed remember?  you are free to use pillsbury…but these were on sale.
so i got them.
(and i used 2 cans to make a bigger amount)

open each triangle…

place about a 1/3 cup of the chicken/chesse mixture to the center of the triangle.

then you pull on the dough till it closes…kind of.  it doesn’t have to look pretty.
the dough is wrapped around your chicken and cheese.

this evening at our house it was silent.
it was kind of weird.
i had christmas music on pandora…talby was reading, annie and sean were painting, the older two were gone….it was oddly quiet for about an hour.  BLESSINGS.

ingredient #4 is cream of chicken soup…whatever brand you want.
this is what we had.

 mix it with 1 cup of milk with a whisk.

pour it over your chicken/dough bundles….

then bake it for about 30 minutes at 350.
you want it to be really done so the dough is all baked.

it’s really good.
i served it for dinner and literally 10 minutes later…

Shannon - This was totally delicious! I had too much chicken to fit into one can of crescents and used the leftover mix rolled up inside of flour tortillas, and it was good that way, too. I just put some of the cream of chicken on top of the tortillas and baked it next to the crescent rolls like enchiladas — it was a good substitute, but the crescent rolls were superior 🙂

Carolyn - My mom used to make (and still does) chicken crescent squares…for all 7 of us kids! It was something we ALWAYS asked for. IT’s a little bit different as I think you use cream cheese instead of cream of soup. Ummm..yum!

ashley chandler - I made this last night and my hubs and I loved it; 3 year old daughter not so much. Oh, well. And since it’s just the 3 of us, I ate leftovers tonight and I just may have liked it even more! I made one slight change we are basically on a spending freeze until payday (which is Christmas Eve- ugh!), so I used canned chicken. I had all the ingredients- yea! It was great even with the sub-par chicken.

Lorilee - This looks really yummy. I make something similar and my family loves it. In my recipe, you combine the chicken with cream cheese wrap it in the crescent roll and pinch all the edges close. Dip in butter and then bread crumbs and bake for the time it says on the crescent roll package. While it is baking we make the Cambells cheddar cheese soup and pour over each crescent roll after they come out of the oven.
I’m going to have to try your version soon, it sounds so good!

i cooked up some chicken earlier today, shredded it, then wrapped it along with shredded cheese–in: wait for it….. crescent rolls!
i like your idea with the creamed soup and baking in a 9×13
i just rolled mine up on a baking stone and sprinkled the tops with more cheese
but our favorite around here is nutella baked in a crescent roll or pb, banana, and 2 segments of a hershey bar rolled and baked
yummy for your tummy!

Mindy - I make this often. I roll my dough back into crescents but I don’t get as much meat/cheese into mine. I spinkle more cheese over the top about 5 minutes before done. My kids are beginning to like it too but they are 5 and 2 so still in the picky stages.

Lindsay - I have a similar one with cream cheese, chicken, and onion. Use 2 crescent rolls (press together to make a square) for each bundle, fill with filling, then pull sides up and press all the seams together like a pyramid shape. brush with butter and sprinkle parmesan cheese and bread crumbs on top. bake till golden. They look fancy enough for a dinner party, but easy enough for weeknights. Crescent rolls save me everytime! I’m going to try yours!

rainbow cupcakes

i hope it didn't seem like i was complaining in the previous post…
i wasn't.
it just seemed like a really full day…physically/emotionally/mentally.

many of you asked how i made the cupcakes.

it is easy!
but time consuming…halfway through i thought "why did i decide to do this?"
they are so pretty it is worth the time. 
i saw these made somewhere…and i can't recall who made them…so smile if it was you…you are smart!

i used white cake mix made according to the box.
(i was making these for school treats too so i used three boxes of cake mix…)
then split the batter into 6 bowls.
then added icing colors to each bowl seperately. 
you could buy them here….or walmart or hobby lobby or michaels.  
gel colors are different than the little droppers…much deeper and a more true color is achieved.
 
next i lined my cupcake pan with paper liners….(wishing i had these…)

i used my small scooper to add batter to each cup. 
i started with purple and did less than a scoop in each one…then i did the same with blue…then green
and so on.

it used up all the batter and it worked doing it that way.
i wasn't concerned about it being centered or perfect…just did it in order and figured it would work 
out to look like a rainbow or at least like tie dye.

Ashley Ann - Saw you added the My Life Rocks shirt on your sidebar. I bought it a couple of months ago! Every time I wear it someone gives me a dirty look as if to say, “Who is she to wear a shirt claiming her life rocks?” I have gotten the strangest responses from people in public for it…odd. I love it though. I have a pic of me in it with all the kids, I should post that sometime!

We tried it with a cake….and it was terrible…strong tasting food dye taste (particularly the dark purple, red and blue)

Jen - COMPLAINING?? Nope–that’s just A Day in the Life and it’s like a lot of things–the things that are the most annoying (having too much to do/too many people to care for) are often the things you also love the most (so much to do!/big wonderful family!).
Believe it or not, it actually makes me miss being home full time, with little ones to take to school and Barbie/Lego messes….

Kyleigh - Meg – 1 question, isn’t it just as easy to make the cake mix from scratch? …not being cheeky, it just surprised me is all. I love them still though.. Also… what lens do you use? glazed apple bars

for a brief time…i was a youth sponsor for our high school youth group at our IL church.
i remember just a few things from that experience.

playing poor man’s lacrosse….


wearing my maternity overalls to youth group…
*why do i remember
that?   &  why did i have so many pairs of maternity overalls?

crying during the lessons….
*i have ALWAYS been a cry-er.
cried through my entire wedding…cry at commercials…movies…EVERYTHING..i cry a little probably every day…but i am not sad…i am tenderhearted?  gushy?  over-emotional? hormonal?!!

AND JP’s mom’s apple bars.
i remember the night he brought them and i fell in love with them…my life changed forever.
i ate waaaaaay too many.
now i want to share this yumminess with YOU.
 
Relax…it has apples….so it’s healthy!

first you combine 4 C. flour, 1/2 t. salt and 2 C. sugar
second, cut in 3 sticks of butter.

butter = that’s dairy = healthy!
 
when it’s crumbly you are finished. (i use my hands for this step, works better than anything i’ve tried)

take half of your crumbly mixture and press it into a jelly roll pan.

peel and slice 5 granny smith apples….cover the pressed down crumb mixture with these apples.

combine 1/3 C. sugar and 1 t. cinnamon, sprinkle it over the apples.
crumble the remaining flour/sugar/butter mixture on top of the apples.
bake it at 350 degrees for 50 – 60 minutes…until it is crispy on the bottom.

after i put mine in the oven i looked out my kitchen window and saw the girls.
i love that view.
cooking or cleaning in my kitchen and watching the kids play at the same time…..{{{HAPPY SIGH}}}.
(this weekend was VERY cold suddenly…soccer/football games were torture.)

after it bakes, let it cool.
make a glaze with 1 C. powdered sugar, 1 t. vanilla, 1 T. water.
drizzle it over entire pan of bars.
cut into squares and ENJOY.

happiness is….

eating the rainbow.

to ease my guilt of how honestly UNhappy i was that it was the last day of school…
i made a cake to help them celebrate.
i had seen versions of the rainbow cake and decided "today's the day!" to make my own.

it's not too difficult.
but it does take some time.

i just used TWO white cake mixes.
following the instructions on the box.
then i divided it up into 6 bowls evenly which turned out to be 1.5 cups in each bowl.
i had all these Wilton Icing colors already…from all the other birthday cakes i have done in the past.
(find them at walmart, hobby lobby, micheals in the cake decorator isle but not the CAKE MIX isle)
also you could use the gel colors in the cake mix isle…i think it's the same thing.

the drop kind of food coloring will NOT work for these bright colors…your rainbow would be pastels.

and if you only have five eggs…you can call your neighbor for one more.
even if you JUST went to the store to buy the cake mix ten minutes before.

add a teaspoon of color into each bowl and stir.
it's so easy a four year old can do it.

i used 9" round cake pans.
make sure you grease them well with shortening or baking spray.
this is a crucial step in making fancy cakes that i think some skimp and then you are screwed stuck.

my cakes were done in 12 minutes.
flip them out on to cooling racks and let them sit till they are completely cool.

it is pure happiness to make.

even the dishes are happy.
just keep baking & don't think about the kids will be home for three whole months in two more hours…

i made the cool whip frosting i have shared before to frost this.
when you make a layer cake you have to cut your cakes to make them flat….but you knew that.
i don't have a picture though.
you take a big knife (or even a tool that is made just for flattening cakes) 
and you cut off the round part of the top of the cake that rises in the oven.
you can let your kids or husband eat that so they leave you alone while you frost the cake.
(you stay away from that turkey…you'll get worms!….name that movie)

then you layer it up…rainbow style.
spread frosting in between each layer.

Sarah @ Handbags*N*Pigtails - I made this cake a couple of years ago for my DD’s 3rd birthday. I agree with you that its not hard to make. But the directions I was given to make it were totally backwards which was such a pain in the rear!(For instance, they had us making the layers in the wrong order so we had to wait until all were done to be able to move on…grrrr)Anyways, it took us forever and I was really crazy about getting “vibrant, real colors” for each layer. My sister in law was teasing me about it but its true…Ive seen others do this cake and the colors are just blah. I didnt want that.
It was a huge hit and Im already wanting to make it again. Do I need a special occasion to make it? Or do you think I can get away with a “just because” rainbow cake?:)

The outside of the cake was vanilla frosting with chocolate swirled through it to signify how the movie started out black and white and the tornado came through. The inside of the cake was rainbow layers. The colors were achieved using KoolAid mixes of different flavors. It was pretty cool – even Grandpa liked it! Kelly - I saw someone called you Supermom… I made rainbow/tie-dyed/playdough/whatever you call them cookies for the end of school last year to celebrate my son’s summer birthday and a mom – to my face – snidely called me an overachiever. Laura - this is the second cake I have seen today that I want to make…and this is my BUSIEST cake week ever…so.the rainbow may have to wait.
Want another tip? Make a simple syrup…boil 1 cup water and 1 cup sugar…cool it a bit..then, using a squeezy bottle, pour it onto each layer BEFORE you frost them….then frost, stack, and decorate.
This WILL be the moistest cake you have ever had. EVER.
And yes. Cake DOES solve many a problem.

baked french toast

you will love this.

i made it for bible study and they went ga-ga over it.
i made it for my family this weekend and craig said "THIS is blog-worthy"

so you need to make it too.

melt 1 stick of butter then add in 1 cup of brown sugar, 1 t. cinnamon and stir together.
pour into a 9×13 pan covering the bottom.

then layer slices of bread on the sugar mixture with the crusts removed.
(it would probably just as good with the crusts on….)
i used 15 pieces of bread.
fill in the holes with smaller pieces.

in a mixing bowl whisk together 2 cups of milk and 6 eggs.
pour over the bread.
that's it.
put it in the oven at 350 degrees for 30-35 minutes.
when it looks baked and golden, pull it out and drizzle syrup over the top.
put it back in the oven under the broiler until brown and bubbly.

NOTE: this step takes very little time.
i set my timer for two minutes and let it ding twice. (i was putting on my make-up…..)
i opened my oven to a huge cloud of smoke and set off my fire alarm.
i had to pick off the burnt parts before i could take it to bible study.
so be careful with the broiler step.

when you serve it, flip it over so the sugar on the bottom (heaven….)
is on the top.
oh my.

frosting

i think most of you will think "you can buy frosting."

"i know how to make frosting"
or "everyone knows how to make frosting"

if so….then i guess don't read this and come back tomorrow.

i have had several people ask me how i make my frosting so i thought i would share.

like every good food in life….
you start with butter.

i always use real butter.
it needs to be room temperture….this is very important.
it should smoosh when you touch it.
if it's not room temp your frosting will have little clumps of butter in it….not pretty.

then i use the mixer to cream the butter till it's smooth…no clumps.

then i dump in half or 3/4 of the bag of powdered sugar and a teaspoon of vanilla.
turn you mixer on the very lowest setting and start to mix this in.

but it still may fly out and hit your shoe….even if you are careful.

it should be very thick…too thick but mostly mixed together after a minute.
then you add milk.

just a tiny bit at a time….about a tablsespoon.
then mix.
if it seems really thick then add another TBS. and mix again.
that should be enough but you your own good judgement to see if you need more milk.

in this semi-blurry picture you can see that the frosting is thick enough to stand on the knife.
but thin enough to easily spread on the cake.
no drippiness.

then the FUN begins.

one other thing…..
when i make this  frosting (shown below…not the same as above)

i do all the steps above and then i fold in a container of cool whip.
then i pour it all into a gallon ziploc bag…close it up…
cut a small hole in the corner and squeeze the frosting on in a spiral motion.

have fun.
and maybe if your lucky a little first grader will ask you 
"is this homemade?"

Michelle - Of course! Homemade things made with love are usually generously given to children, and are universally under-appreciated. My mom made a cookie when I was a child that was labor intensive, so she called it the “grown up cookie” and wouldn’t serve it to children for they couldn’t appreciate it! Kudos to you for doing making it anyway!
I have made homemade icing too (though the cool whip trick is new for me, I’ll try it) and I want to report, you can use lemon or orange extract as well, and/or, a little zest of either of these things can be SUPER YUM. I recently made a carrot cake with orange cream cheese frosting that was so good, we ate the excess icing with a spoon!
One more thing…Mr. is in the food business, and you are ABSOLUTELY right about the butter needing to be room temp. Important too that it gets that way naturally, not with any microwave action. Butter’s perfect temp is around 65-67 degrees, warmer than that and the consistency starts to break down and it doesn’t hold as many air bubbles. Most people wouldn’t notice, but it can make the icing runny.

And I almost spit out my tea when I read the list bit about the first grader asking if it was home made and then saying it tastes disgusting! That would happen to me.. probably by my own daughter!
