sweet potato & black bean chili

i rarely post recipes here any more… i think all the food blogs scare me away from it.
but i made this the other night by throwing things together and it was delish!
and of course chili is not your typical spring-is-coming recipe but i always just blog what is current and THIS is happening in my house right now… 70 degrees outside or not.  🙂  Like i am literally eating a bowl of this… in my pajamas at 2:17 in the afternoon right now.

i had all of this in pantry so i threw it all together.  🙂

after you brown the ground beef you can add your onions to the beef to cook or just toss it all in one big pot.
all the ingredients.

i don’t think it’s possible to take a pretty picture of chili…. IMG_0188
but i did clean my stove top just to take these pictures.

stir it up and let it come to a boil.
then turn down the heat to low, cover it and let it simmer for 30-45 minutes.
When the sweet potatoes are tender then it’s ready.
You can add more spice if you need it.
or more water if it’s too thick.
and if you have a packet of chili seasoning… you could use that instead.

Of course you can top it with cheese, sour cream & chips if you’d like too.
but just avocados is so good too!

Mindy - My husband would love this. I make a black bean/ sweet potato chili often but it is a vegetarian version. I love it with cornbread (hello carbs!). I add sour cream on top but your idea of avocado sounds delicious!

Gemma - I’ve always really enjoyed your foodie/recipe posts! We always make your Apple bars in the autumn and your blueberry buckle in the summer months. Please carry on sharing 🙂

what a fun way to remember!

i was going through Instagram and Facebook, seeing so many posts on what they learned this year.
and their word for the year.
i felt blank.
i thought… did i learn ANY thing?
my brain was feeling like mush from the holiday crazy schedule.

then i looked through these photos.
i see love.
and being loved.
color.
life.
dreams.
strength.
JOY.
courage.
creativity.
focus.
change.
FUN.

this year i found out how to love my kids deeper than i ever have.
this parenthood stuff is HARD and crazy amazing all at once.
it’s no joke.
and i am so proud to be their mom even when things get hard.
I’m happy to walk through life beside them too.

this year i realized i had dreams in my heart i hadn’t validated.
after a little working through what that means… 2015 is the year to make them happen.
i feel like jesus is saying “enough stalling Meg!”

what i reflect on again and again is that through it all God is so good!!
that doesn’t mean everything is perfect.
it’s not.
life is messy.  (sometimes a complete disaster!)
everyone has struggles.
no one is alone in that.
but God’s Grace covers all of it.
He takes our offering of brokenness, weakness and failure and FLIPS it upside down.
He says “i love you. You are mine. You are new.”
we are not our mistakes.
we are not our past.
we are not what people think of us.
we are made new through Him.
God is good.  He gives me HOPE.  He carries me through.

bring on 2015.
i am ready.

one week later….

alright.
so it’s been a whole week since i blogged.
that’s a long time!
craig said “soooo… are you EVER going to blog again?”
to which i turned and unleashed a long string of LEAVE ME ALONE!!! I AM BUSY! HOW DARE YOU’s on him like a sweet wife does when called out on her slacking.

let’s see… this past week has been bonkers with activities.
just like at your house i assume.
i schedule appointments for each of my kids in december (eye dr…dentisit… etc) and then we do their christmas shopping for their siblings afterwards.
one on one.
we started this a few years ago.shop
half of the fun for them is the lunch stop i think!
in the past 9 days I’ve eaten at chipotle 4 times and Chili’s once.
it’s really sweet to watch them shop trying to decide what their sisters or brothers would like… within their budget.
we do a “matching” program (in a way).  i pay for it all and then they pay me back most (70-ish%) of it.
i don’t make them pay it all back to me because i like their big hearts and wanting to get nice(r) gifts for people they spend most days fighting with.
it gives me hope.
maybe they will like each other when they grow up??

ever since annie was home sick on thanksgiving break we have been recording The Price Is Right on the dvr.

she comes home from school and watches it.
EVERY DAY.
it’s such a clean show! (other than the dresses on the lady models….)
and i may or may not get teary eyes when they win the big showcase and they seem like they may pass out.
did you know there is even a MALE model on the show now?!
i think you should watch over christmas break.
bring back all the old memories of summer and being a kid in the 80’s!

my girlfriends and i ran in the jingle bell run again this year!
every year we try to think of reasons not to do it but honestly… the spa time afterwards makes any race worth it.
this year i ran the whole thing!
last year i did too but that was purely to stay warm because last year it was 3 degrees!
this year was cold but not like that.
and you would think i would be on an excerise high from doing so well in the run (not because of speed but because of not walking) but you would be wrong in that thinking!
i have a terrible time getting exercise into my day.
but i won’t give up this battle.
i just keep hoping i will become a lover of exercise.
someday….

i have a thing for peppermint.
we are BFFs all the way.
so believe me when i say i have bought so many boxes of these k-cups from target it’s not even funny.
i am stockpiling them.
because they will be gone and i will have to go back to my second favorite flavor of coconut mocha in january.
what i am really craving is peppermint ice cream.
and i DID purchase Peppermint Mini Oreos this week because i plan to make a milkshake with peppermint ice cream AND the mini oreos at some point in the next week.
because it’s once a year and resistance is futile.

 

 

two weekends ago craig asked me if i wanted to hang up a new light?
swoon.
that is like whispering sweet nothings in my ear.
so we pulled out the old, dusty, bent up chandelier i got at the barn forever ago, figured out if it still worked and he even took all the crystals off for me!
i cleaned it and painted it and then last weekend he hung it up!

and while he did that i sewed new curtains.
the black and white gingham fabric is by the yard at ikea.
i moved the curtains i had in the dining room into the kitchen.
that big straight lined pattern was SO EASY i said “i don’t ever want to sew anything without lines again!”

on IG people keep asking for a christmas home tour.
that’s a great idea but i am waiting for my cleaning lady to come and then i will take pictures.
she is the best part of my week.
pretty much every week.

in case you wondered… she cleans the kitchen, living/dining room, guest bath and my room/bathroom.
my kids still have to clean their own rooms, the family room and their shared bathroom.
skills they need in life.
i want them to learn to do the work.
because i still have to clean stuff everyday.  all kinds of things!
it feels like i never stop cleaning (you feel this way too right? please say yes!)
it’s NEVER ending.
i appreciate the professional cleaning help every week more than i can explain.

 

ok…. one last thing today.
christmas cards.
are you sending them?
i used to be a rock star at christmas cards.
but i am not any more.
so IF i was going to send a card it would be this one:

also we have moved twice in three years… so NO ONE knows our address anymore.

(and i f you are thinking WHY would i ever send Meg a christmas card?? i get that and there is NO PRESSURE whatsoever to do this weirdo project.  just an idea that popped into my head. i know that not all my ideas are great 🙂 )

Lynda Anderson - I just moved, too! I’ve received three cards, one was a relative, one was my realtor and one was a friend through whom I order Mary Kay. 🙂 I feel your pain. Of course, I haven’t even started my cards yet … no, really, I haven’t even taken the photo I want to use for the cards. I always send Happy New Year cards. Takes some of the pressure off.

Lucy - I am a cleaning lady and I applaud you that you make your kids clean their rooms etc. So many people don’t make their kids do anything. They need these life skills I agree!

Patti - You’re so funny…receiving Christmas cards from your faithful followers, even though most are strangers. But I have an idea of what you can do with all the cards you will undoubtedly get. I heard this idea from one of our parish priests, and have practiced it for a few years now. After the holidays, we put all the cards in a basket by our kitchen table and when we say grace, one of our kids picks a card out of it and we say a special blessing for that family. Sometimes the same family is prayed for many times over throughout the year and I always think how maybe God knows they need extra prayers! It’s a fun and wonderful way to keep Christmas blessings going the whole year through. And that being said, “Merry Christmas to you and your beautiful family!”

Merry Christmas! I have read your blog for years and don’t remember how I got started. Alot of the craziness that goes on in your life I can relate to. I too have 5 children – 2 boys and three girls. I love anything crafts, I have an Etsy store and love the lord. I was reading your blog for several years before I realized both our husbands work at the same bank.

Keep up the good work with your blogs they are an inspiration to me and literally make me laugh out loud sometimes.

I too used to rock Christmas cards…but I have spent a good chunk of my day addressing and writing in cards and I’m wondering how worth it is, LOL. Its my favorite thing to get cards, so I should, oh…and its my business…lol, but between three dozen wrong addresses, and the fact that it’s 12/20…this is nuts!! 🙂

I also have to comment on The Price Is Right. 🙂 My husband loved that show as a kid, and when my kids were tiny and he worked weird hours, he loved being home at that time random days, he’d commandeer PBS Kids or Nick Jr to watch that. My kids were never as entertained as he was, haha…

Anyway, good for you on the race…I keep hoping I will learn to enjoy working out too…I try, and I have to believe that’s good enough for today. Merry Christmas, if you don’t blog again before then! 🙂

Listen, I was at my PTA co-president’s house Thursday for our Board meeting/Christmas luncheon and she had so many cards on her mantle. I was a little jealous, because I’ve received maybe…6? And so I commented about it. Leslie says, “well, how many do you,send? I send out about 125-140” ummmm…..let’s see….so far they aren’t even ordered, and so they’ll probably get picked up at Walgreens Tuesday morning and I’ll address them in the parking lot. Ugh. Maybe that’s why. And I couldn’t really whine about the PTA president job being so busy because she’s my co! AND she hosted the luncheon!!! But I’ll totally send you one – email coming.

Kerri Lynne - Several thoughts on this great post: 1) My dad was a teacher and you reminded me of when we watched game shows together over Christmas break – there were LOTS of game shows in those days. 2) IKEA has FABRIC? I still have not made it to the new one in KC, and it’s only an hour away… 3) I love sending/receiving Christmas cards, but will not be doing ours this year until after we return from a 10-day trip to Israel (leaving a few days after Christmas!). 4) Gorgeous chandelier! Wonderful time with your kids, can’t get that back. Going slow over here and it’s just fine. With high schooler and college kid a lot of the pressure to create Christmas magic is gone, and I am totally cool with that. I’ve got 4 gifts for each of my two boys, and I’m pretty cool with that…really need one more each…hate for me to have purchased more gifts under tree for me than them! I too would love a Christmas tour of your house, always so interesting seeing how you decorate for a Northern hemisphere winter Christmas, while we have a Southern hemisphere summer one.

On July 17, 2014, Vanity Fair® and Dress for Success kicked off the national LiftTOUR – a nationwide bus tour with a focus on fit and philanthropy. The LiftTOUR will travel across the country conducting bra fittings at major retail locations, and for every woman fit, Vanity Fair® will donate a brand-new bra to the local Dress for Success Affiliate. Between July and the end of October, the LiftTOUR will plan to stop at 70 different locations in 12 major U.S. markets.

I would LOVE to be a part of that! Not kidding. A good bra is a game changer! It changes how your clothes fit. It changes how you look in the mirror. It affects the way you feel! a good bra can give confidence! I hope to find the LiftTOUR near me!

One Frugal Girl - I was fitted before buying undergarments for my wedding dress. I was told I was a size D, which seemed crazy since I typically wear a B!

Tanya H - Due to basically a family crisis, by the time my mom was able to take me to get my first bra at 11, she insisted on me having a fitting, so that’s how I learned to buy bras. When I got married I didn’t feel like I could afford “nice bras” and bought them at Walmart. After I had my second baby, and my bras all broke within a couple weeks of each other, my mom took me shopping and had me fitted again. Wow- what a difference that made!!
I hate standing there naked with a stranger measuring me and wanting to see how the different styles look on my body, but I do so appreciate the result. I barely notice when I’m wearing a well-fitting bra! I’ve never had a bad experience getting fitted at JCP or Dillards.

laurie magpie ethel - I got fitted a few years ago at Nordstroms. After two kids I was tired of guessing where I was size wise and that area had done some shifting about. It made a world of difference and I would so recommend it. I came with a more comfortable fitting bra and a new perky look! Well worth the time!

jodi - I was fitted a few years back at a local bra store and what a difference indeed! I wish companies made cuter nursing bras, as I’ve been hanging out in those for the last few years, and with #4 on the way, that won’t change anytime soon. One day, when past the nursing years, I look forward to cute, matching bras and panties!

Jenny B. - I’ve had professional fittings before, (at Dilliard’s and VS) but it wasn’t that helpful. Plus, I dislike shopping with an attendant. I know I shouldn’t, but I feel pressured to buy when someone is helping me. Another frustrating thing is that sizes are not standard from one brand to another or even from one style to another of the same brand (just like clothes). My best bet has been to have a general idea of what size I need and try on a few different styles in that size. Then, determine if I need a smaller band size or a bigger cup size or whatever, and then go get another batch to try on. At the JC Penney here, in the lingerie section, the dressing rooms have posters on the wall that show what things look like when the fit is wrong and when it’s right. That’s been more helpful to me than getting measured. All that said, I think it’s really great that good bras are part of the Dress for Success program. They definitely make a difference (good bras AND the program). 🙂

Leslie - It’s been about two years since my last bra fitting so I’m definitely due. There’s also explanations online if people are too shy to go to the store (although you may need a husband or friend to help hold the measuring tape). But the results vary by store sometimes, according to victoria secret I’m a 36B and according to Macys I’m a 32D and by my own measurements I was a 34C. Those sound like big differences but once you understand how sizes work you understand. The smaller the band size, the bigger the cup size (letter) for the same volume of boobies :). The trick is finding one where the underwires are big enough to hold everything but not so wide they dig in or stick too far back under your arms. Do yourself and favor and get fitted!

Crystal - I have been fitted but feel like it was an awful experience. The woman at the store didn’t take much time to explain anything and differences in sizes etc.

Aimee - I had a fitting once at a Victoria’s Secret. I was surprised, as most women who have a bra fitting are, that I wasn’t wearing the right size. I was also surprised when she said that I could wear either a 36 B or a 34 C (I could be getting the numbers wrong, it was years ago)because they fit the same. I don’t know if that is always true or was just true at their store but it was a good experience and changed they way I shop fro bras.

Mrs. B. - I’ve never been fitted. I think I should but I’ve just never had the opportunity…

Liana - I’ve been fitted several times in the past, but am way overdue now (after weight gain and loss and 3 kids). It all depends on the skill of the fitter, but usually well worth the time. The first time what I thought was my size changed dramatically and really made a difference. I’ve bought my last few bras at Target, so no option to be fitted. 🙁

Sandra K - I’ve had bra fittings at major department stores and the “big name” lingerie store – it makes such a difference! A good bra is the start to a great wardrobe.

Heather - I was fitted at Victoria Secret once, but honestly I didn’t feel like it made much of a difference because I don’t think the girl really knew what she was doing. I’ve heard of fancy schmancy stores where they do bra fittings and I’ve wanted to try those, but that store is not in my state. One time when I was traveling to a state where there is that store, I tried to plan a stop there but it just didn’t work out.

Iris - I am Canadian so I can’t enter the sweepstake-but that’s okay. I have to share that 16 years ago, at the age of 21 I had to have a rare form of cancer removed from my chest wall. This obviously affected my bra fitting as the surgery left me ‘lopsided’. I heard about the Bra Bar in Winnipeg and went for a bra fitting. The ladies there were absolutely amazing. The atmosphere was so beautiful and serene in their shoppe. They were sensitive and whisked me into a private fitting room, beautifully decorated and spacious. They taught me tricks of what to look for in finding a bra that will fit properly and helped me feel feminine again after feeling like a very feminine part of me had been disfigured at a very young age. I would love to go back there now, 16 years later, and be pampered like this again and recommend it to everyone!

Lori - So sad about the heart rock. At least you have a picture of it. My kids find heart rocks for me too. My 6 year old boy brought me one today and said “mommy I found you a heart rock but it was muddy so I washed it off in a mud puddle and dried it on my shirt. ” Sweet boy. Oh and the old, rusty forgotten places make me so happy too.I need to stop along the way to enjoy them as well.
