it’s friday.

i am so glad.

it's been a yucky week of laying around and not feeling "right" but today…..
the SUN is SHINING!
we had a calm morning with all good moods!
my kids were all playing outside before school!
good stuff.

and i feel normal.

i slept great.

it is a good day.

my camera was in hiding all week since i was in hiding under my covers….
but yesterday afternoon i brought it back out.

i am so grateful for blogs.
with the help of blogs i have had some excellent dinners this week.

we had this on monday.   
every bite was eaten.
a new favorite.

and this on tuesday.

raig and i both said several times "soooo good!"
it was.

and THIS tonight.

stuffing pillow forms into cases
cleaning my bedroom 
taking pictures of pillows for etsy
making chocolate chip cookies
going to a park (if the sun stays out)
getting out of pajamas before noon (maaaaybe)

Pam’s Cheesecake

i have this friend Pam.
she took me to africa with her….we text everyday…she makes so much good food it’s unreal.
she made this cheesecake for a party at my house.
i can’t even describe it.

words can’t describe how i feel about this cheesecake.

created it.
she worked with ingredients from scratch…for years…and CREATED it.
i mean seriously…who does that?

PAM does.
and she agreed to let me blog it.
with pictures.
you are such lucky readers!

here goes…

you need these goodies.
4 packages of cream cheese.
i told you it was good.

put fudge stripe cookies in a big ziploc bag.
and smash them up.

add melted butter and sugar to the cookies in the bag.

and smoosh it all into a spring form pan.

microwave the cream cheese 1 – 2 minutes.
then blend it in your mixer.

with all the other ingredients too.

is that not the prettiest thing you have ever seen?!

you bake it for 45 – 50 minutes at 350.
take it out of your oven (try not to cry about the perfection you about to enjoy…)
leave it in the pan.
let it cool.
then put it in the refrigerator or freezer….you could even leave it overnight.

but that is crazy talk…who would wait a whole day to eat this?!

then pam taught me how to make homemade whipped cream.

it is so easy.

you put whipping cream in a mixing bowl…and mix it.
that is it.
um…..DUH.
why didn’t i know that?!

wednesday.

ok…today is better than the past two have been.
i feel relieved by that.
the pool is filling up.
the rain is gone.
the boys' nerf guns have been confiscated.
i think we are going to make it.

i received a shirt in the mail….and i love it.

i really really like it.
and i want to make cupcakes when i wear it.
i thought this one was cute too.

the porch is my favorite spot in the summer.
yesterday i set up memory on the bench/coffee table.
it took the entire top…and was hard to remember with such a long line of cards.

some questions were asked about the summer list yesterday…i will clarify.
 
*WORLDS OF FUN is an amusement park with roller coasters in kansas city.
*PEPPERNUTS are little spice cookies…we love to eat them but i have never made them.
 here is a website about them.  
 they are a mennonite thing…craig has mennonite
 roots and so does our hometown.
*a BLOCK PARTY is a street party with our neighborhood (our block).
*the FROGGIE POOL is our public pool…it has a frog shaped slide.
*DEMO DERBY is the mud pit where cars crash into each other…that we pay money to watch!

we bought journals yesterday and the three youngest were so pumped about it.
they filled up the front already with stories and stickers.  
very sweet.

chocolate chip cookies for my grumpy kids this morning.
they are all so grumpy.
cookies cheer people up right?
i won't be having any cookies but i can still choose to be cheerful.

but if i could just find a gold headband…red boots…star covered leotard…
it would be EASY!

friday

checking in today for a moment.

it is 10 degrees here.
that is COLD.
nasty cold.

i get to go on hot date tonight.
i am very excited about it.
never mind…date cancelled.  blah…. 

doing good on the resolutions so far…
the NO SUGAR is still on.
and by saying no sugar i mean nothing i think of as sugar…
ice cream, cookies, fruity pebbles, candy, hot chocolate, cafe mochas, pop, syrup, cupcakes!!!
but i have had a granola bar…yogurt…maple/brown sugar oatmeal
so…that is what i mean by no sugar.
i am not reading labels or substituting with artificial sweetners.
and i am not thinking it will be forever…just till i am no longer craving it and eating it 24-7.
at the very least until march.
it's gonna be tough. 

i just got these in the mail.
i don't usually read books (because i am a big LAME-O)
but these are "required reading" for a project…also in march.

i am honestly excited to read them…and i rarely get excited about a book.

i made PW woman cookbook meatloaf and twice baked potatoes for dinner last night.
i messed up and it took me 2 full hours to get dinner on the table.
UGH.
but…those potatoes…WOWEE-WOW-WOW.  
so good.
just as we sat down craig said "aren't you going to take a picture?"  
they looked so yummy.
but i was too tired and hungry.

oh waffle.
he sure needs some grooming.

christmas recap part 3

now that the family was home from their ski trip….the family gatherings had to begin!

sean got a remote control helicopter and it was the hit of all the toys.
and then it got stuck in talby's hair.

there was smoked brisket and creamed corn.
sean shouted "WHERE did you get this corn?!"  
he loved it so much he had to find out where it was made.
i told him and he didn't believe me that it didn't grow that way.
it was good.

daphne got to come out of her kennel at the end for annie to love on her.

daddies make the best jungle gyms.

the winter storms started in as we drove home from here.
and it continued all night.
craig's sister and her family ended up staying with us that night.
craig picked up his cousin at
 airport.
the rest of his family driving from california was stuck in traffic from the weather.
it took them hours longer than usual.

we went to church.
my kids were NOT well behaved.
oh well….this will pass.

this arrived in our mailbox on christmas eve:

a german magazine called Kid's Life used my pictures for their article on decorating with kids at home.
i didn't know they were going to use the picture of my neighbor baby London.  
what a nice christmas present!  
there were two other full page pictures also.  SO COOL!
and aunt peg was visiting…she speaks german…so she translated!  awesome.
thanks Kid's Life!

our kids opened their christmas jammies and a super soft blanket…just for them.
everyone loves new pj's.

sean got a stereo and some classic rock CD's – van halen & pearl jam. 
the stereo has a remote….score!
scott opened his gift and said "a football….thanks!"  trying to sound as excited as possible.
i said "you're welcome…there is something else in that box"
he found the iPod box and asked "this isn't really what it is…is it?!"
he was shocked.
that was fun to see.
and he gave me a big big hug…. i loved that.

after we opened gifts and ate our christmas breakfast and had another cup of coffee,
we started to get ready to go to my parents.
we were packing our bags when they called and said they were snowed in.

change of plans.
not going to my parents.
we had snow and wind but they had LOTS of snow and wind and ICE.
 

we relaxed a bit and then headed back to craig's moms for lunch instead.
ALL the family had arrived now.

then we decided to have the christmas dinner that we would have missed…at our house.
so we drove back home and i cleaned up for an hour.
craig shoveled snow.
then everyone in craig's family came here.  it was great!
nice to have everyone being flexible with plans changing.

Snot Dork-sen was the most original name…along side Mr. Noogie Nugget.
silly boys.

when i went to put the kids to bed everyone cleaned up my kitchen!
truly the best way to throw a party…they bring all the food AND they clean it all up!
